FAT TUESDAY……

So I made a commitment to go Paleo for Lent! What I failed to check was the start of Lent. It starts the day before Valentine’s day! Hmmmmm there goes my dreams of desserts and chocolate covered fruits! It’s ok I adjusted I called my baker and bought a chocolate wasted cake to celebrate Fat Tuesday instead. I am not sure how many days Lent is this year but I do know that it is longer than 30 days and you need to commit to 30 days to give something a fair trial. I will take before and after pictures and this blog will serve as my sounding board for my “adventures.” Eating out, cooking, baking and attempting to change my entire diet…. Good bye sweets! 

Mexican Made Healthy!

Being a Latina I was raised surrounded by delicious flavorful food. 4 years ago when I decided to change my life I thought I would never be able to enjoy my favorite food again….. I was wrong and I have worked hard remaking all my favorites!

So last night I made fish tacos…. Typically fish tacos are served in two warm corn tortillas filled with battered and deep fried fish with a creamy spicy sauce. Tweaking this recipe is actually super easy…

1. Grill instead of fry! I season and grill the fish on the BBQ or inside on a electric grill. Shrimp is also amazing in tacos

2. Condiments, Condiments, Condiments!!!! My trick to making everything taste a million times better! Chop up everything you can think of as a low/no calorie topping! A supper yummy quick topping peel and slice up cucumber and cover with lime/lemon juice… Delish with tacos.

3. My secret sauce!!!! Okay street tacos come with these orange spicy mayonnaise or cream sauce??? IDK? but amazing…. Here is my Healthy Swap! Mix Fat Free Sour Cream and Chipotle Chillies in Adobo Sauce. Chop up the chillies and use all the delicious sauce. Mix it into the sour cream to your liking!

Get the right GEAR!

My run was pimped at Christmas. New running shoes, iPod shuffle, apple core, and armband for my iPhone. I am not bragging but let’s talk about equipment and having the right tools for the job. Would you want a surgeon to insert inferior implants into your body (true story)? No way! Would you want a builder to construct your home with the cheapest materials available? Not if you could help it. Why? Because you want the best possible results! The same goes for your gear. Optimal performance calls for optimal gear!

I have come to realize that investing in great gear will not only improve my performance but my self esteem as well. When I get up to that starting line I feel confident and ready to go! I feel it is an investment in my success. It also provides validation that what I am doing is worth while. I never understood teachers spending so much on their classrooms but I get it now. They love what they do, they take pride in their classroom and they invest what they can so everyone can see how much they love it! The same is true for all your ventures…. Go out and buy that cute pair of workout pants or lifting gloves. Take your gear to the gym and confidently exceed everyone’s expectations…. especially your own!

New Year… New You? Are you making resolutions and more importantly are you keeping them? I have started a Chalene Johnson 30 day PUSH challenge that is focused on changing your whole life and figuring out what you truly want! More on that later…. One goal is to start blogging regularly and about new topics. One new topic is sharing and/or revamping healthy recipes. So here is an easy one to start!

We all have heard over and over breakfast is the most important meal of the day… But sometimes you feel that there is just no time for breakfast. This is why I cook once and have breakfast for myself for a week! That’s right one quick recipe can feed you for an entire week!

Crock Pot Steel Cut Oats

2 cups Steel Cut Oats

10-12 cups water

Spray your crock pot with non stick spray. Pour in the water first and then add your oats. Set the crock pot at low for 6-8 hours (overnight).

Serves about 10 1 cup serving between 108-120 calories (depending on how many servings yo get out of your oats)

I personally use the 12 cups of water and each serving has approximately 108 calories but they are thin in texture and I add a chopped up piece of fruit into mine. The mix in options are endless… Pumpkin puree, tropical fruits, nuts and cinnamon! Hopefully this is helpful on your busy weekday mornings! What will you mix in? Are my wheels just spinning?

How far can I go? I planned on testing that this week but with a sprained calf it has to he postponed.
How will we ever know what we are capable of if we just keep doing and living the same routine everyday? There are so many things I want to do and try but just haven’t made that extra effort to get out there and do them. I think as the year is coming to a close I will be making lists of things to do not in the distant future but NOW! I mean the world might end tomorrow and then where will I be?

A few of the top of my head… (Sitting on my tub in a towel???)
Make a cake from scratch
Run 8 plus miles
Do real research about becoming a physical therapist/ pa assistant

I will be revisiting this list and updating it through out the year! No more waiting!

Holidays… Are they Happy?

As the holidays approach I wonder what it all means?

Family: We spend time with those we love…. Or do we spend tense moments with those we are obligated to see. Do we succumb to the social pressure to spend time with our family. Do we really want to be there. Personally it takes me a few hours to relax and actually began to enjoy myself. I feel that all the false pretense and elephants in the room crowd my holiday celebrations.

Food: Yes this is an issue for me. I love holiday foods and enjoy a great meal. But, how do you reconcile your fitness goals with these gluttonous meals? And heaven forbid you attempt to show restraint. That just starts the envious haters going on and on about how you need to eat more. Or on the other hand you have to sit through hours of conversation about who is on a diet and what they are doing. I am damned if i do and damned if I don’t. Last year I took healthy options for dessert and was told how awful they were. 

Friends: How do you fit your friends into a jam packed holiday schedule? With all the mandatory parties, dinners and such where do the people you actually want to spend time with fit in? As for me this year we are hosting a Friends Holiday Dinner between Christmas and Thanksgiving! I am so looking forward to making delicious food and laughing with good people. 

Fitness: I am putting out there right here…. I plan to try a 8-9 mile run on Thanksgiving morning. That will be the longest I have ran ever. I will also walk after dinner…. Luckily for me most of my close friends are fitness friends so I will be busting a sweat through out the holiday season.
